Finally caught up!
I would be a Registered Dietitian and have my own practice. I would consult those with eating disorders, whether it was obesity, or anorexia/bulimia, and those who have special dietary needs (such as gluten/casein intolerance). After consultation I would accompany them to the store and then to their home where I would teach them how to prepare the food. I'm all about "hands on", rather than, "here is a list you are on your own".
Since high school I have always been interested in business. In fact, I have only worked in the banking and financial industry. I have always felt that business was 'safe' for me. However, this past year I have discovered my true passion.
Technically it has been a passion of mine since 2007. When we left Montana, I was overweight and the heaviest I had ever been in my entire life. I was always a pretty tiny thing, but after having my daughter and turning 25 my metabolism didn't want to work the way it use to. I HAD TO exercise??!!! WHAT?! I was only use to eating whatever I wanted whenever I wanted. I also had a very poor and deadly idea that if I wanted to loose weight I just would not eat. I battled anorexia for a very long time as a young child and into my adulthood (that's another blog post).
So....after moving to Washington, I decided the time was right for a fresh start. I began working out and lost weight (40 lbs) all on my own! The journey continued as I started to learn more about healthy foods, organic foods, etc. while living in one of the best places to do that in.
Then we moved here, to Georgia. Upon finding out the our son was high functioning autistic and casein intolerant, I discovered how difficult it is to afford, find, and cook for a child with a food intolerance. However, the benefits outweigh any cost or challenge in my book. We saw an amazing change in our son and how it improved his daily life.
So after that long story, you now know what I would love to be and why. Today I am currently in the process of attaining a degree from a university that does not offer a Nutrition program via online. However, I am hopeful that God will direct us toward an area where I can reach my dreams of becoming a RD next year.
