When I was told that Christian had a casein allergy, I was so confused on as to what to use for supplemental diary products. You wouldn't believe the amount of food that contain milk in them, until you start reading labels.
We have all cut back on dairy, and we feel much better without it. There is still ice cream in the freezer and cheddar cheese slices in the fridge. But for the most part, we choose the alternative. I'm blogging about this particular allergy to help others who may be searching for dairy/egg alternatives. Hopefully, they won't have to search the internet to the extent I did.
I found this amazing biscuit/pancake mix online. Here's the recipe (I wrote it on the container so I wouldn't have to constantly search for the recipe in my binder). Combine the Flour, baking powder, Sugar, salt and butter in a food processor until blended. Then store in a container in the refrigerator.
On the other side of the container, I wrote out the biscuit and pancake recipe.
Biscuits: I used Almond, or Coconut Milk for the substitution for milk
Pancakes: I used applesauce (1/4C per egg) and Almond,or Coconut Milk substitution.
These are the product must haves for Egg and Dairy Free cooking:
Earth Balance Butter
Flaxseed Meal (as an egg replacer)
Egg Replacer (Ener G brand)
So Delicious Coconut Milk - the vanilla flavor is tastier than the original (my opinion)
Almond Breeze Milk (again, vanilla is our favorite)
